  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 4 overripe bananas, finely crushed
  • 1 ½ cup flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 cup chopped walnuts (optional)
  1. Preheat the oven to 350°F.
  2. Cream together the butter and sugar.
  3. Mix in the eggs and crushed bananas.
  4. Sift together the flour, baking soda, and salt. Mix into the creamed mixture.
  5. Mix in the vanilla extract.
  6. Mix in the chopped walnuts (optional).
  7. Pour into a greased and floured loaf pan.
  8. Bake for 1 hour (20 minutes for 24 mini cupcake pans)
