- ½ cup butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 4 overripe bananas, finely crushed
- 1 ½ cup flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp vanilla extract
- 1 cup chopped walnuts (optional)

- Preheat the oven to 350°F.
- Cream together the butter and sugar.
- Mix in the eggs and crushed bananas.
- Sift together the flour, baking soda, and salt. Mix into the creamed mixture.
- Mix in the vanilla extract.
- Mix in the chopped walnuts (optional).
- Pour into a greased and floured loaf pan.
- Bake for 1 hour (20 minutes for 24 mini cupcake pans)
